In general, I make small batches of unrepeatable wines. When the batch is finished, that wine won’t be made again, along with its name and its label. And in the few cases I do repeat variety, vineyard, and wine design, the name remains and the year of harvest impose its mark. The same grapevine produce different wines each year, which is both respected and highlighted here at Las Payas.
I lack the interest to endure. Las Payas is an ephemeral event. It is just some random guy in a certain placemaking wine during some harvests.
